2019 Chateau Yaldara Rose
Single vineyard Sangiovese (53%) and Grenache (47%). Machine harvested at night, gentle pressing to avoid excessive phenolics or colour extraction direct into tank. Free run juice was then cold settled for 4 days. Juice was racked into stainless steel fermenters and 10% into French oak to undergo ferment. Cool ferment to retain varietal freshness and integrity then bottled early to maintain vibrancy and aroma.
