2016 1847 Wines Pappy's Paddock Shiraz

Shiraz is perfectly suited to the warm Barossa Valley climate. The bouquet on our Pappy’s Paddock Shiraz is aromatic and lifted, with plum and dark cherry fruit with integrated oak. The palate has plush berry fruits, olives and layers of chocolate and sweet spice. A velvety tannin structure will allow the wine to age gracefully in bottle for ten or more years.

Near perfect ripening conditions. Cool nights and warm days resulted in beautifully clean fruit with supple ripe skin and seed tannins. One of the great years.Fruit is picked early morning to retain cool berry temperature and varietal integrity. Fruit is crushed into traditional 8T concrete open fermenters with heading down boards, then fermented on skins for 7 to 8 days to aid in colour extraction. Heading down boards keep the skins within the wine medium to maximize colour extraction. After ferment, the wine is pressed off skins to be transferred to barrel for 24 months oak maturation. After this period wines are assessed for quality with the best parcels proceeding to blending.
